Ensete ventricosum is a traditional multipurpose crop mainly used as a staple/co-staple food for over 20 million people in Ethiopia. Despite this, scientific information about the crop is scarce. Three types of food, viz., Kocho (fermented product from scraped pseudostem and grated corm), Bulla (dehydrated juice), and Amicho (boiled corm) can be prepared from enset. These products are particularly rich in carbohydrates, minerals, fibres, and phenolics, but poor in proteins. Such meals are usually served with meat and cheese to supplement proteins. As a food crop, it has useful attributes such as foods can be stored for long time, grows in wide range of environments, produces high yield per unit area, and tolerates drought. It has an irreplaceable role as a feed for animals. Enset starch is found to have higher or comparable quality to potato and maize starch and widely used as a tablet binder and disintegrant and also in pharmaceutical gelling, drug loading, and release processes. Moreover, enset shows high genetic diversity within a population which in turn renders resilience and food security against the ever-changing environmental factors and land use dynamics. Therefore, more research attention and funding should be given to magnify and make wider use of the crop.

Ensete ventricosum (Welw.) cheeseman which belongs to the family of Musaceae is one of the main sources of starch in Ethiopia. This study aimed at evaluating epichlorohydrin cross-linked enset starch as a drug release sustaining excipient in microsphere formulations of theophylline. Extracted enset starch was cross-linked using epichlorohydrin as a cross-linking agent. The effect of cross-linker concentration, cross-linking duration, and cross-linking temperature on the degree of cross-linking and release rate of microspheres prepared by emulsion solvent evaporation method was investigated using the two-level full factorial design. Accordingly, the concentration of epichlorohydrin and duration of cross-linking were the most significant factors affecting both the degree of cross-linking and drug release rate. Thus, the effects of these two factors were further studied and optimized using the central composite design. As per the numerical method of central composite design, the optimal points were obtained at epichlorohydrin concentration of 13.70% and cross-linking time of 3.82 h. Under these optimal conditions, the model predicts the degree of cross-linking of 74.70% and drug release rate of 28.00 h1/2. The validity of these optimal points was confirmed experimentally. The microspheres of the optimum formulation also exhibited minimum burst release with sustained release for 12 h. Besides, the optimized formulation followed the Higuchi square root kinetic model with non-Fickian diffusion release mechanism. The finding of this study suggested that cross-linked enset starch can be used as an alternative drug-release-sustaining pharmaceutical excipient in microsphere formulation.

False banana /Ensete ventricosum [Welw.] Cheesman/ is exploited as a food crop in Ethiopia where it represents an important staple food. The plant is harvested and large amounts of biomass residues are originated, mainly from the pseudo stem (i.e., fiber bundles obtained from the leaf sheaths after being scrapped to produce starchy food) and the inflorescence stalk. These materials were studied in relation to their summative chemical composition, composition of lignin, lipophilic and polar extracts. Moreover, their structural characteristics, in view of their valorization, were scrutinized. The analytical studies were performed with the aid of FTIR, GC/MS, Py-GC/MS and SEM. The fiber bundles are aggregates of mainly long and slender fibers with low ash, extractives and lignin contents (3.8%. 4.4% and 10.5% respectively) and high holocellulose and α-cellulose contents (87.5% and 59.6% respectively). The hemicelluloses in the fibers are mostly highly acetylated xylans and the lignin is of the H-type (H:G:S, 1:0.7:0.8). This lignin composition is in line with the FTIR peaks at 1670 cm-1 and 1250 cm-1.The inflorescence stalk has high ash content (12.3% in the main stalk and 24.6% in fines) with a major proportion of potassium, high extractives (25.9%), and low lignin and α-cellulose contents (5.8% and 17.9% respectively). The stalk includes numerous starch granules in the cellular structure with the predominant presence of parenchyma. The potential valorization routes for these materials are clearly different. The fiber bundles could be used as a fiber source for paper pulp production with the possibility of a prior hemicelluloses removal while the inflorescence stalk has nutritional value for food and fodder. Furthermore, it can also be used for sugar fermentation products.

Enset (Ensete ventricosum) provides staple food for 15 million people in Ethiopia after fermentation into kocho. The fermentation process has hardly been investigated and is prone to optimization. The aim of this study was to investigate the physicochemical and microbial dynamics of fermentation practices in the Gamo highlands. These practices show local variation, but two steps were omnipresent: scraping of the pseudostem and fermenting it in a pit or a bamboo basket. Enset plants were fragmented and fermented for two months in order to investigate the physicochemical (temperature, moisture content, pH and titratable acidity) and microbial dynamics (total viable aerobic counts, counts of Enterobacteriaceae, lactic acid bacteria, yeasts and moulds and Clostridium spores counts, and Illumina Miseq sequencing). Samples were taken on days 1, 7, 15, 17, 31 and 60. The pH decreased, whereas the titratable acidity increased during fermentation. Of all counts those of lactic acid bacteria and Clostridium spores increased during fermentation. Leuconostoc mesenteroides initiated the fermentation. Later on, Prevotella paludivivens, Lactobacillus sp. and Bifidobacterium minimum dominated. These three species are potential candidates for the development of a starter culture.

The objective of this experiment was to evaluate the effect of feeding different levels of enset corm as a supplement to sheep fed Rhodes grass hay. Thirty local yearling rams with a mean (±SD) body weight of 16.97 (±1.13) kg were used. Six sheep were allocated to each of the five treatments in a completely randomized design. The treatments were hay ad libitum and 129 g dry matter (DM) corm (T1), 188 g DM corm (T2), 248 g DM corm (T3), 100 g DM noug (T4) cake, and hay alone (T5). One hundred grams of noug seedcake was supplemented for all treatments except T5. Total DM and organic matter (OM) intakes of sheep in T1, T2, and T3 were the highest (P < 0.05) compared with sheep in other treatments, while sheep in T5 consumed the lowest DM and OM. The total crude protein (CP) intakes of sheep in T3 and T2 were greater (P < 0.05) than the other treatments, while sheep in T5 consumed the lowest CP. The apparent DM and OM digestibility coefficients of T1, T2, and T3 diets were higher (P < 0.05) compared with T5. The lowest (P < 0.05) CP digestibility was in T5, whereas the digestibility among the supplemented groups was similar (P > 0.05). The daily body weight gain for T1, T2, and T3 diets was greater (P < 0.05) than that of T5. The feed conversion efficiency for T1 and T2 was higher (P < 0.05) than T5, while T4 had an intermediate value. The highest (P < 0.05) nitrogen retention was in sheep fed T3 diet, while the lowest was in those fed T5. It is concluded that farmers can supplement enset corm at 129 g DM/day as an alternative energy source to improve the productivity of sheep for small-scale farmers under enset-livestock production systems.

This work presents a techno-economic and environmental assessment of the glucose syrups production from sugarcane bagasse, plantain husk, cassava husk, mango peel, rice husk and corncobs. According to the economic analysis, the corncob had both, the lowest production cost (2.48USD/kg syrup) and the highest yield (0.61kgofsugars/kg of wet agroindustrial waste) due to its high content in cellulose and hemicellulose. This analysis also revealed that a heat integration strategy is necessary since the utilities consumption represent an important factor in the production cost. According to the results, the pretreatment section requires more energy in the syrup production in comparison with the requirements of other sections such as production and sugar concentration. The environmental assessment revealed that the solid wastes such as furfural and hydroxymethylfurfural affected the environmental development of the process for all the agroindustrial wastes, being the rice husk the residue with the lowest environmental impact.

The total antioxidant capacity, total phenolics content (TPC) and nutritional content of five types of enset (Enset ventricosum) flour in comparison with four staples (teff [Eragrostis tef], wheat, corn and tapioca) were evaluated. Teff, corn and "amicho" (corm of enset) had the highest ferric reducing antioxidant power (FRAP). The FRAP and TPC of teff (1.8 mmol Trolox equivalence/100 g dry matter (DM) and 123.6 mg gallic acid equivalent/100 g DM, respectively) were over 4-fold larger than the lowest obtained from "bulla" (dehydrated juice of pseudostem of enset). Corn had the lowest IC(50) value of 1,1-diphenyl-2-picrylhydrazyl radical scavenging (10.27 mg DM mL(-1)). Teff had the highest crude fat content (3.71%) and some mineral profile (P, Mg, Mn and Cu). Enset products had higher fiber, Ca, K, Mg and Mn content as compared to wheat and corn. Ethiopian staple teff has a potential for developing value-added food products with nutritional and health benefits.

Biosynthetic O-methylation at various sites along the backbone of inducible phenylphenalenones in Musaacuminata var. "Williams" (Musaceae) and Wachendorfiathyrsiflora (Haemodoraceae) was investigated using 13C-labelled precursors. The inducibility of O-methylated metabolites was demonstrated in both species and the origin of methoxyl group from [methyl-13C]L-methionine was confirmed. In addition to known phenylphenalenones, a methoxylated metabolite, 4-(4-hydroxy-3-methoxy-phenyl)-benzo[de]isochromene-1,3-dione, was detected and its structure elucidated mainly by NMR spectroscopic techniques. The experiments were used to discriminate methionine-derived and artificial methoxy groups formed during methanolic extraction. Finally, demethylation of 4'-methoxycinnamic acid and subsequent conversion to 3',4'-methylenedioxycinnamic acid was demonstrated in M.acuminata.

Feed intake, in vivo nutrient digestibility and nitrogen utilization were evaluated in male sheep fed different fractions (leaf, pseudostem, corm, whole plant) of enset, untreated or 2% urea- and 3% calcium oxide- (CaO or lime) treated wheat straw and Desmodium intortum hay as sole diets. All feeds, except D. intortum hay and enset leaf had low crude protein (CP) content. Non-fiber carbohydrate contents were higher in enset fractions, especially in pseudostem and corm relative to other feeds. Enset leaf and pseudostem had high calcium, phosphorus and manganese contents. Corm, whole enset and D. intortum hay were rich sources of zinc. Daily dry matter and CP intakes were higher (p < 0.05) in sheep fed D. intortum hay (830 and 133 g, respectively) than those fed pseudostem (92 and 7.8 g, respectively). Organic matter digestibilities were highest for corm (0.780) and whole enset (0.776) and lowest for D. intortum hay (0.534) and untreated wheat straw (0.522). The CP digestibility ranged from 0.636 in D. intortum hay to 0.408 in corm. Nitrogen (N) balance was highest (p < 0.05) in D. intortum hay (10.4 g/day) and lowest in corm (-1.3 g/day). Enset leaf could be a useful protein supplement whereas the pseudostem and corm could be good sources of energy.

Plants are a source of many biologically active products and nowadays they are of great interest to the pharmaceutical industry. In the present study, the mutagenic potential of the Musa paradisiaca fruit peel extract was assessed by the single-cell gel electrophoresis (SCGE) and micronucleus assays. Animals were treated orally with three different concentrations of the extract (1000, 1500, and 2000 mg/kg body weight). Peripheral blood cells of Swiss mice were collected 24 h after treatment for the SCGE assay and 48 and 72 h for the micronucleus test. The results showed that the two higher doses of the extract of M. paradisiaca induced statistically significant increases in the average numbers of DNA damage in peripheral blood leukocytes for the two higher doses and a significant increase in the mean of micronucleated polychromatic erythrocytes in the three doses tested. The polychromatic/normochromatic erythrocyte ratio scored in the treated groups was not statistically different from the negative control. The data obtained indicate that fruit peel extract from M. paradisiaca showed mutagenic effect in the peripheral blood cells of Swiss albino mice.

A study was conducted to evaluate the macro and trace mineral contents often enset varieties collected from Sidama zone of southern Ethiopia. Samples of leaf lamina, leaf midrib, pseudostem and corm were taken from ten enset varieties at the age of 5 to 6 years during the main rainy season. The dry weight of each variety and fraction were also determined. Mineral contents in fractions of different enset varieties were analysed and compared with nutrient requirements of ruminants. The contribution of different enset fractions to the total dry weight was variable (P<0.05), the highest being from pseudostem and the lowest from leaf lamina. There were varietal differences (P<0.05) in macro and trace mineral content in different fractions except phosphorus (P) content of leaf lamina. Most enset fractions were rich sources of major minerals such as P, potassium (K), calcium (Ca) (except corm) and magnesium (Mg). Sodium (Na) content was very low. Most fractions were rich in iron (Fe) and manganese (Mn), but deficient in copper (Cu), except leaf lamina. Zinc (Zn) content was high in corm, but low in other fractions. This account of the macro and trace mineral content of different enset varieties and fractions could help in strategic supplementation intended to alleviate mineral deficiencies.
